What does cold-pressed actually mean?

Cold-pressed means the oil was extracted by mechanical pressure alone, without added heat and without chemical solvents. It's on almost every natural oil label, and it's one of the few such terms that describes an actual process rather than a feeling.

The process

Seeds or kernels are fed into a press, usually a screw press, which crushes them until the oil separates from the solid material. Some heat is generated by friction, which is why the term is cold-pressed rather than cold. Producers keep temperatures controlled, typically below around 50°C, though there's no single global standard for the number.

What comes out is filtered and bottled. That's the entire method, and it's essentially unchanged from how oils have been pressed for centuries, just with better equipment.

What it's being compared to

The alternative is solvent extraction. The seed material is washed with a chemical solvent, commonly hexane, which pulls out far more oil than pressing can. The solvent is then evaporated off. This is the standard method for large-scale commercial oil production because the yield is dramatically higher.

There's a third option, refining, which follows either method. Refined oils are bleached and deodorized to produce a clear, neutral-smelling, colour-consistent product. That's why a refined oil looks the same in every bottle and a cold-pressed unrefined one doesn't.

Why it matters, and where it doesn't

Heat and refining degrade the compounds that are heat-sensitive: the tocopherols, polyphenols, and other minor constituents that make up a small fraction of the oil by weight. The fatty acid profile, which is most of the oil, survives either way.

So the honest version is this. Cold-pressing preserves more of the trace compounds and the oil's natural colour and scent. It does not transform the oil into a different substance, and anyone telling you a cold-pressed oil works several times better than a refined one is selling harder than the evidence supports.

Where it clearly matters is what it tells you about the producer. Cold-pressing yields less oil from the same raw material, so it costs more. A brand doing it is making a deliberate choice against volume.

How to spot it in the bottle

Unrefined cold-pressed oils vary. Argan is golden and smells faintly nutty. Batana is dark and smells strongly of coffee. Rosehip runs amber to deep orange. Batch-to-batch variation in colour and scent is normal, and it's evidence the oil hasn't been stripped.

Perfect consistency across bottles isn't a mark of quality in an unrefined oil. It's usually a sign of refining.
